Soft, Fluffy Vanilla Bean Marshmallows Made from Scratch
These homemade vanilla bean marshmallows are soft, fluffy, glossy, and full of classic vanilla flavor. Made with vanilla bean paste for a beautiful speckled finish, they’re a fun from-scratch treat that feels nostalgic, playful, and just a little bit fancy.

Ingredients
Marshmallow Base

3 packets (21 g) unflavored gelatin

½ cup cold water

1½ cups granulated sugar

½ cup light corn syrup

½ cup water

¼ tsp kosher salt

1 tbsp vanilla bean paste
For Coating
-
½ cup powdered sugar
-
½ cup cornstarch

Baking Instructions
1) Pour ½ cup cold water into the bowl of a stand mixer. Sprinkle gelatin evenly over the surface. Let bloom for 5–10 minutes.
2) Combine sugar, corn syrup, ½ cup water, and salt in a saucepan. Heat until the sugar dissolves, then bring to a boil. Cook without stirring to 240°F (115°C).
3) With the mixer on low, slowly pour the hot syrup into the bloomed gelatin.
4) Gradually increase the mixer to high. Whip for 8–12 minutes, until white, thick, glossy, and fluffy.
5) Add vanilla bean paste and whip for another 30–60 seconds.
6) Grease a 9×13-inch pan and dust lightly with the powdered sugar/cornstarch mixture. Spread the marshmallow into the pan and dust the top lightly.
7) Let set for at least 6 hours, preferably overnight.
8)Turn out and cut into squares. Lightly dust the cut edges with the powdered sugar/cornstarch mixture.
